Запечено сирене на фурна ( Baked Bulgarian cheese)

Do you remember Wallace and Gromit? Every time I say or write the word “cheese” I remember them . But in this post the main character will be the white Bulgarian cheese.  This appetizer is so fast to make that you  don’t actually need to do anything. Yet, your guests will appreciate it so much that they will not leave you alone until they get the recipe 🙂

All you need for this appetizer is a large enough piece of Bulgarian cheese.  If the cheese is unavailable in the area where you live, I am sure you can find some Feta cheese. It is very similar to the Bulgarian one. The biggest difference is that the Feta is saltier and you need to soak it in a plain water for at least 4-5 hours before you bake it.

So, as I mentioned above get a piece of white cheese big enough for the number of guests you have invited. Slightly wash the cheese with a cold water to get rid of the thin film that might have created on the surface of the cheese. Get a frying pan or any other kind of  pan that has low walls (not like a sauce-pan) and is oven-proof. Place the piece of the cheese into the pan. Sprinkle some red paprika (mild or slightly hot, depending on your taste). Place the pan in the oven on the second from the top rack. Turn the oven either on 250 degrees Celsius or on a grill whichever you have. The aim is to have the hottest possible environment  inside the oven. You do not need to put any kind of liquid in the pan.  Now go and powder your nose. But do just this as the cheese will be ready in 15 to 20 minutes. It is ready when there is a nice brownish crust on top of it. Do not be scared by the water that has appeared in the pan. It is from the cheese. Take the cheese out from the oven and serve it immediately while it is hot along with a glass of red wine. The combination of this cheese and the red wine is going to be something your guests will not forget so easily.
