Apple Cake


  • 4 eggs
  • 2 cups sugar
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 2 tbsp cinnamon
  • 4 medium to large apples – peeled, seeded and cut into 0.5cm cubes
  • 1 medium to large apple-peeled, seeded and cut into thin slices for decoration.

Preheat oven to 200° C.  Butter the baking form and if flour it lightly (if the form has a non sticky cover you can omit the flour).

Beat the eggs and sugar until the mixture becomes white. Mix the flour with the baking powder and add it to the egg and sugar mixture. Mix well. Add the cinnamon and the vanilla. Add the apple pieces and again mix well, this time with a spoon.

Pour the dough in the form.  Put the apple slices on top.

Bake for about 30 min. A tooth pick submerged in the cake should come out clean.

Let the cake cool to room temperature. Cut it into cubes and add powder sugar.
